Small-batch sourdough, hand-laminated pastries and tea cakes, baked from five each morning and sold the same day. When the shelf is empty, that is it.

    Everything on the shelf went into the oven after five today. Nothing is carried over, nothing is frozen.

  • An eighteen hour rise

    Our doughs prove slowly in the cold overnight. The long second rise is where the flavour comes from.

  • Natural levain only

    No commercial yeast, no improvers, no premixes. Just flour, water, salt and a starter we have kept going since 2021.

The bakehouse

One mixer, two ovens, no shortcuts

Second Rise started as a weekend bake sale from a terrace house kitchen in Sea Park. Five years on, we are still a small crew in a corner shoplot, mixing every dough by feel and selling out most days by early afternoon.

The name comes from the proofing bench. The second rise is the slow one, the stage you cannot rush, and it is where a plain dough turns into bread with real character. We plan our whole day around it.
